Saint Louis Days... Saint Louis Nights

Low-Fat Gazpacho

"When summer comes around we all turn to casual entertaining. This delicious Gazpacho can be made ahead -refreshing and easy to serve, while the main course is on the grill. For an unusual twist, serve from a bunch bowl or use your coffee mugs. Garnish with fresh herbs. This popular summer soup improves with age."

Yield: 8 servings

2 cups finely chopped tomatoes
1 cup finely chopped celery
1 cup finely chopped cucumber
1 bunch green onions, thinly sliced
16 ounces tomato sauce
3/4 cup water
1/4 cup vinegar
1 tablespoon olive oil
Pepper to taste
1 teaspoon salt
2 teaspoons Worcestershire sauce

• Combine the vegetables in large bowl.
• Combine remaining ingredients; pour over vegetables and stir.
• Cover and chill (at least overnight).
