Black Bean and Corn Salad
"The colors and flavors of this salad will add zest to your luncheon gathering."
1 16-ounce can black beans, drained
1 16-ounce can whole kernel corn, drained
1 4-ounce can chopped green chiles, drained
3 green onions, thinly sliced
1 green bell pepper, chopped
3 tablespoons fresh lime juice
2 tablespoons minced fresh parsley
2 tablespoons olive oil
1 /8 teaspoon salt
Pepper to taste
Lettuce leaves or tomato cups
Sprigs of cilantro
• Combine the black beans, corn, green chiles, green onions and green pepper in a large bowl.
• Add the lime juice, parsley, olive oil, salt and pepper. Mix well.
• Chill for 1 to 2 hours before serving.
• To serve, spoon onto lettuce leaves or into tomato cups.
• Garnish each serving with a sprig of cilantro.
